I would like any information or tips from people on what happens to food left in a smoker for warming. I have a new electric smoker and not much time to experiment with it. Can it be used to keep food warming or for reheating food that’s already finished cooking? The food it cooks comes out so moist and flavorful, that I can’t see how it would ruin food left on a low heat to keep warm or to be reheated. Thanks for whatever info you can provide. I cook for buffet parties occasionally, and i’m trying to work some smoker recipes into the menu. If anyone knows of any great smoker recipes that would remain tasty for several hours, please let me know that, also.

Before smoking soak your wood about 30 min. before starting.
Allow yourself plenty of time for smoking.
A 5 lb. pork can take up to 7 to 10 hours.

The slower the cook the more tender the meat.

You can use it to keep food warm for hours.
Keep the water in the tray so the food does not dry out.
